Baked Miso Fish

Ingredients

300g Cod Fillet
1/2 cup miso paste
1 tablespoon sugar
1 tablespoon rice wine
1/2 lemon


1. Rinse fish fillet and drain. Marinate with miso paste, sugar and rice wine for 2 hours.


2. After 2 hours, rinse marinated fish with cold water, then place onto grill rack in oven. Bake at 200 degree celsius for 15 minutes.

3. Squeeze lemon juice onto fish and serve.




Note:
I left the fish to marinate in the fridge before I left for work in the morning. Since, I had to leave it marinated for about 10 hours, I decreased the amount of seasonings, so that it will not be overly salty. These are the quantities I use. Please adjust accordingly to suit your taste.

1 1/2 teaspoons sugar
1 tablespoon rice wine

I did not rinse all the miso paste away before baking. The miso paste made the fish skin nicely crispy.

hmm.. very simple. i was thinking of trying out the same ingredients for boiling plain rice.

I've never thought of that before, but it sounds like a good idea!

Just for the record, I have tried cooking rice with miso. I mixed about a tablespoon of miso with hot water, and top up the amount so that the water is sufficient to cook 1 cup (the cup which comes with the rice cooker) of rice for 2 persons.

The rice has a light taste of miso. Though it smells good, it can be better though. Perhaps adding some dried seaweed on top will help.
